Crock Pot 3 Bean Chili

This 3 Bean Chili is a fall favorite and combines a multitude of flavors that join together in a fantastic meal.

Ingredients
1 tablespoon olive oil
6 MorningStar Farms Breakfast Sausage
1 large onion, chopped
1 large red bell pepper, cubed
1 large yellow bell pepper, cubed
2 jalapeño chilies, seeded, chopped
1 tablespoon plus 2 teaspoons chili powder
2 teaspoons ground cumin
1 1/2 28-ounce cans crushed tomatoes in puree
1 15 1/4-ounce kidney beans, drained, rinsed
1 15-ounce can cannellini (white kidney beans), drained, rinsed
1 15- to 16-ounce can black beans, drained, rinsed

 Directions
Heat olive oil in heavy large saucepan over medium-high heat. Sauté chopped onion for about 5 minutes. Add  bell peppers and chilies and sauté 1 minute. Transfer to slow cooker and add chili powder and cumin and stir for about 30 seconds. Add crushed tomatoes and beans. Cook on Low for about 8 hours or High for 4 hours. Season chili to taste with salt and pepper. Add quartered sausages about 30 minutes before serving. 

Zucchini Gratin

Zucchini Gratin is an easy recipe and with a great taste. If you want to add some more color to it, use Yellow Squash in addition to the Zucchini.

Ingredients
3/4 stick unsalted butter
1 pound yellow onions, cut in 1/2 and sliced (3 large)
2 pounds zucchini, sliced 1/4-inch thick (4 zucchini)
2 teaspoons salt
1 teaspoon freshly ground black pepper
1/4 teaspoon ground nutmeg
2 tablespoons all-purpose flour
1 cup hot milk (Yes, it must be hot)
3/4 cup fresh bread crumbs
3/4 cup grated Gruyere (Parmesan if you can't find Gruyere)

Directions
Preheat the oven to 400 degrees F.

Meltthe butter in a very large (12-inch) saute pan and cook the onions over low heat for 20 minutes, or until tender but not browned. Add the zucchini and cook, covered, for 10 minutes, or until tender. Add the salt, pepper, and nutmeg and cook uncovered for an additional 5 minutes. Stir in the flour. Add the hot milk and cook over low heat for a few minutes, until it becomes saucy. Pour the mixture into an 8 by 10-inch baking or casserole dish. Combine the bread crumbs and cheese then sprinkle on top of the zucchini mixture. Bake for 20 minutes until brown.  Serve and enjoy.
